Minced Dried Oyster with Diced Vegetables
"Hao Shi Ji Lai"

INGREDIENTS:
125 g Dried Oyster
90 g Carrot
90 g Bamboo Shoot
6 pieces Dried Chinese Black Mushrooms
90 g Lean Pork
2 stalks Spring Onion
1 stalk Chinese Parsley
1 head of Lettuce
1 Tbsp Seafood Paste (Hoisin Sauce)
SEASONING I:
1 1/2 Tbsp Light Soya Sauce
1/2 tsp Sugar
1/3 tsp Salt
1 tsp Sesame Oil
1/2 tsp White Pepper
1/8 cup water
Thickening Sauce:
1 tsp Cornflour
1 Tbsp Water
- Wash and soak the oyster and mushrooms. Trim off the mushroom stems.
Steam for about 15 mins and chop finely.
- Mince the meat and marinate with 1 tsp of light soya sauce and 1/2 tsp
of dark soya sauce and 1/2 tsp of cornflour.
- Parboil carrot and bamboo shoots. Dice. Coarsely chop the parsley and
spring onion.
- Stir fry the minced pork with 3 Tbsp of corn oil / peanut oil. Add
the diced oyster and mushrooms with 1 Tbsp of Chinese wine.
- Add all the other ingredients and seasoning. Stir fry for about
10 minutes before stirring in the thickening sauce.
- Sprinkle the spring onion and parsley on it before serving.
- Wash and clean the lettuce and cut it into round pieces. Spread a little
seafood paste (hoisin sauce) on each piece and wrap the ingredients in the
lettuce pieces. Roll it up and eat! :)
