Stuffed Broccoli with Prawn Colloid
"Hua Kai Fu Gui"

INGREDIENTS:
1 head Broccoli
190 g Prawns
1 Tbsp Minced Carrot
SEASONING:
1/3 tsp Salt
1/2 tsp White Pepper
1/2 tsp Sesame Oil
2 tsp Cornflour
GRAVY:
3/4 cup Chicken Stock
1/3 tsp Salt
1/3 tsp White Pepper
1 tsp Cornflour
- Shell and devein the prawns and dry with paper towels.
- Pound them with the back of a chopper (cleaver), add seasoning and whip
into a colloid.
- Cut the broccoli into small pieces.
Parboil the broccoli with water, 1 tsp salt and corn / peanut oil.
- Stuff the prawn colloid on each broccoli and sprinkle some minced carrot
on each broccoli. Steam until cooked.
- Bring the gravy ingredients to a boil and pour it over the stuffed broccoli
before serving.
