Poached Marble Golby (Soon Hock)
"Fu Gui You Yu"
Prosperity, Luxuries and Plenty of Good Fortune!
INGREDIENTS:
1 fresh Marble Golby (Soon Hock)
4 stalks Spring Onions (shredded)
1 piece ginger (shredded)
2 pieces Red Chilli (shredded)
SEASONING I:
1 tsp Salt
1/2 tsp White Pepper
1 Tbsp Cornflour
SEASONING I:
1 Tbsp Light Soya Sauce
1/3 tsp Sugar
- Cut, wash and dry the fish. Cut 3 deep gashes on each side.
Marinate with Seasoning I.
- Heat enough corn oil / peanut oil to deep fry the fish. Slowly
slide the fish into the hot oil. Cover the wok and leave to cook for
about 6-8 minutes. (Use High heat)
- Remove the fish from the wok and display on the platter. Sprinkle
the spring onion, ginger and red chilli on it. Add in Seasoning II, then stir
in 2 Tbsp of hot corn / peanut oil and the dish is ready.
