Poached Marble Golby (Soon Hock)
"Fu Gui You Yu"

INGREDIENTS:
1 fresh Marble Golby (Soon Hock)
4 stalks Spring Onions (shredded)
1 piece ginger (shredded)
2 pieces Red Chilli (shredded)

SEASONING I:
1 tsp Salt
1/2 tsp White Pepper
1 Tbsp Cornflour

SEASONING I:
1 Tbsp Light Soya Sauce
1/3 tsp Sugar


  1. Cut, wash and dry the fish. Cut 3 deep gashes on each side. Marinate with Seasoning I.
  2. Heat enough corn oil / peanut oil to deep fry the fish. Slowly slide the fish into the hot oil. Cover the wok and leave to cook for about 6-8 minutes. (Use High heat)
  3. Remove the fish from the wok and display on the platter. Sprinkle the spring onion, ginger and red chilli on it. Add in Seasoning II, then stir in 2 Tbsp of hot corn / peanut oil and the dish is ready.
