Rock Around the Christmas Tree
RECIPES & GOODIES
During the holiday season, chances are, you will be invited to ~ or host ~ parties. I am certainly not the best cook in the world, my husband can attest to that, but I love making little goodies and treats. So here it goes. . .
White Chocolate Dipped Pretzels:
Ingredients: 1 bag pretzels ~ white chocolate baking bars (most grocery stores sell the bars in the baking section)
Directions: Melt pieces of chocolate in a double broiler. If you don't have a double broiler you can use two pots. Or you can also melt the chocolate in the microwave. With both methods, be sure to stir often. Once the chocolate is melted, simply dip the pretzels and place on wax paper to cool. "Yummy" This "goodie" is so simple it's a crime!
Raisin & Nut Clusters
Ingredients: milk chocolate bars or white chocolate bars ~ peanuts (about 2 cups) ~ raisins (about 1 cup)
Directions: Use a double broiler or the microwave to melt chocolate pieces. Stir often. Once chocolate is completely melted pour over peanuts and raisins. Stir to coat well. Drop by spoon fulls onto wax paper to cool.
Divinity
Ingredients: 2 1/2 cups sugar ~ 1/2 cup corn syrup ~ 1/4 tsp salt ~ 1/2 cup water ~ 2 egg whites ~ 1 tsp vanilla
Directions: Combine sugar, corn syrup, salt, water and cook to hard boil. Beat egg whites until stiff-continue to beat and "gradually" add the hard mixture. Add vanilla and beat 4-5 minutes longer. Put tablespoon blops on wax paper. You may use powder sugar to help the blops to dry out. You may also add a pecan to each blop. Note: It is very hard to make Divinity when there is moisture in the air.
Cranberry Delight
Ingredients: 1/2 lb. cranberries (fresh, frozen or can may be used) ~ 1 cup sugar ~ 1 large envelope raspberry jello ~ 8 oz. can drained crushed pineapple ~ 1 cup miniture marshmallows ~ 1/2 pint cool whip ~ 2 oranges, cut in pieces ~ 1 cup finely chopped pecans
Directions: Note: If you use fresh cranberries be sure to wash them first. In a medium size pot place cranberries and enough water to just cover them. Add sugar and bring to boil. Add jello, stir until dissolved. Place in refrigerator until it begins to gel. Remove from refrigerator and add drained pineapple, nuts, marshmallows and orange pieces. Fold in cool whip. Put in bowl ~ glass bowl look very festive. Return to refrigerator to set overnight. This is a family favorite at Christmas dinner!
Hot Apple Cider
Ingredients: 2 qts. apple cider, 1 cup brown sugar, orange, whole allspice, whole cloves, cinnamon sticks, coffee filter or cheese cloth, string (sewing thread works well), slow cooker or crock pot
Directions: Pour apple cider into the slow cooker. Add one cup of brown sugar and stir until dissolved. In the coffee filter or the cheese cloth put one teaspoon each of whole allspice and whole cloves, and two cinnamon sticks. Use the string to tie off so the filter makes a bag. Place the bag in the cider. Wash the orange well. Slice the orange and allow the round slices (skin and all) to float on top of the cider as it heats. Allow the cider to heat about two hours before serving. It not only tastes great, but smells great too!
