1 cup self-rising flour = 1 cup all-purpose flour plus 1 tsp. baking powder and 1/2 tsp. salt

1 cup cake flour = 1 cup sifted all-purpose flour minus 2 Tbsp.

1 cup all-purpose flour = 1 cup cake flour plus 2 Tbsp.

1 tsp. baking powder = 1/2 tsp. cream of tartar plus 1/4 tsp. baking soda

1 Tbsp. cornstarch = 2 Tbsp. all-purpose flour

1 Tbsp. tapioca = 1 1/2 Tbsp. all-purpose flour

1 tsp. baking powder = 1/4 tsp. baking soda plus 1/2 cup buttermilk (to replace 1/2 cup of the liquid called for)

1 pkg. active dry yeast = 1 cake compressed yeast

1 cup granulated sugar = 1 cup packed brown sugar or 2 cups sifted powdered sugar

1 tsp. dry mustard = 1 Tbsp. prepared mustard

1 tsp. finely shredded lemon peel = 1/2 tsp. lemon extract

1 cup corn syrup = 1 cup granulated sugar plus 1/4 cup liquid

1 cup whipping cream = whipped 2 cups whipped dessert topping

1 cup buttermilk = 1 Tbsp. lemon juice or vinegar plus enough whole milk to make 1 cup (let stand 5 minutes before using)

1 cup whole milk = 1/2 cup evaporated milk plus 1/2 cup water or 1 cup reconstituted nonfat dry milk (plus 2 tsp. margarine, if desired)

1 clove garlic = 1/8 tsp. garlic powder or minced dried garlic

1 small onion = 1 tsp. onion powder or 1 Tbsp. minced dried onion

1 lb. fresh mushrooms = 6 oz. canned mushrooms

1 cup diced cooked chicken = 1 can (5 oz.) boned chicken

Juice of 1 lemon = 3 Tbsp. bottled juice

Juice of 1 orange = 1/3 - 1/2 cup canned juice

1 cup Bar-B-Q sauce = 1 cup ketchup plus 2 tsp. Worcestershire sauce

1 Tbsp. dry sherry = 1 Tbsp. dry vermouth
