Mousse au chocolat

This is a wonderful recipe from Mia, which was handed to me in October 2001. I had the opportunity to taste it one evening. It was really a lovely chocolate mousse, quite different from the one I had made on several occasions. Over to you, Mia:

CHOCOLATE MOUSSE

Ingredients for 4 servings: 2 eggs, 2 tablespoons sugar, 100 g chocolate (1/4 milk chocolate, 3/4 dark chocolate). A little milk.

Preparation: Break the chocolate into small pieces and melt it together with the milk in a double boiler (put the pot in a pot with boiling water).

Separate the eggs. Add half the sugar to the egg yolks and the other half to the egg whites.

Beat the egg yolks with the sugar until foamy and add this to the melted chocolate. Mix well.

Beat the egg whites with the sugar until firm and fold this slowly and gently under the chocolate mixture.

Put in the fridge to cool down.

 

PS. 1: You can add flavours to the mousse, like coconut, cointreau or other liqueur…

PS. 2: To make a lighter mousse, you can add 1 more egg white.
