The food at Symes Zee Villa ranges from the standard American breakfast to exotic dinners of island cuisine. For example, a dinner might consist of fresh Tuna in Creole sauce with popo (papaya), carrots, callaloo (spicy soup made of dasheen leaves), garlic bread, and more tasty, fried dasheen. Top this off with home-made rum raisin-coconut ice cream and a cup of Dominican coffee or bush tea (spearmint, basil, etc.).
Symes-Zee Villa is named after the proprietor Timothy Symes who was born in Dominica but became a naturalized citizen of the U.S. After an interesting career in the U.S. Army with assignments in Europe and working in New York for a furniture store, United Parcel Service, and Bankers Trust Company he decided to return to his homeland. In Dominica he enjoys the peace and tranquillity of nature while running Symes Zee Villa in the mountains and Symes Zee Eatery with several guest rooms in Roseau.
