Bull (male) Mahi Mahi



Grilled Mahi Mahi

Start with fresh mahi-mahi, filets from one you caught are the best. (Actually I use this marinade and style for marlin, ono, and ahi too.)  Trim off the dark brown sections of the fish.

Marinade:
1 cup shoyu (soy sauce)
˝ cup macadamia nut oil (or olive oil)
2 tablespoons minced onions
1 teaspoon chili pepper
4 cloves garlic (minced)
˝ teaspoon minced ginger
1 tablespoon sugar
˝ tablespoon sesame oil

black and red pepper to taste

Combine ingredients in tupperware® bowl or ziplock® bag.  Add fish and allow to marinade for about 30 minutes.

Prepare a hot fire (gas grill, weber, or indoor range).  Cook fish for about 2 minutes on each side.  Don't overcook.

Hint:  I use a wire grill thing that is like two wire grills with a handle on it.  You place the fish in it and the other side closes over it.  Then you place the whole thing over the fire.   When it is time to turn it, you just flip the whole thing.
