I am of Irish/Canadian descent
on my mother's side and
Swedish/Norwegian
on my father's.

Some members of my mother's
family were already doing
a wonderful job of researching
that family's history so I decided
to see what I could find
on my paternal roots.

My grandfather, Henry Rosvold,
was born in Trondheim,
Norway in 1879.
update 10/13/97
I am so excited. I just received
an envelope from the Social
Security office. I wrote to
them many months ago for
information and today I
received copies of the
applications that both of
my grandparents filled out to
obtain a Social Security number.
One of the pieces of information
that I had been lacking up
to this time was the names of
my great grandparents. I now
know that my grandfather's
parents were Ole and
Christine (Olsen) Rosvold
and my grandmother' s parents
were Nels and Margaret
( unknown) Wicklund.
Now on with the search.

I was amazed at the amount
of information that is
available for doing
genealogical research
on the Web. I have even
had correspondence from
several people in Norway
offering to help me in
my search. One very nice man
even E-mailed me a page
of the Trondheim phone
book with the Rosvold's listed
Below are just a few of the
things I have found that
have given me wonderful
information on doing research
and on Norway in general.
At some point I hope to be
adding resources for Sweden also,
but for the time being, I am really
caught up in Norway.
The people, customs and general
information about this wonderful
country of my ancestor's.

A TRIBUTE
To my Maternal Great Grandmother

Here are just a few traditional
recipes from Norway.

DEER ANTLERS
3 eggs
3/4 cup sugar
2/3 cup whipping cream
2/3 cup sour cream
3 cups flour
2 T. baking powder
1 tsp. cardamom
2 T. melted butter
shortening or oil
Beat eggs and sugar
until light and lemon-colored.
Whip cream and
sour cream lightly together.
Sift the dry ingredients.
Add alternately with melted
butter and both creams
to the egg mixture. Mix lightly
together.
Refrigerate overnight.
Roll the dough into
1/3" sausages.
Cut into 5" lengths.
Form into a wreath.
Make two notches
along the edges.
Heat the shortening or oil
to 350 degrees F. Deep fry,
a few at a time, until golden,
three to four minutes.

Buttermilk pancakes, pancakes,
potato cakes and raised
pancakes are served
with coffee throughout
Norway.
The latter are served on
ferry boats in western Norway.

Raised Pancakes
3/4 cup butter
1 cup sugar
4 eggs
1 quart buttermilk
4 1/4 cups flour
pinch of baking powder
1 tsp. baking soda
2 tablespoons baking powder
1/2 tsp. vanilla extract
butter
Melt the butter, add sugar
and beat in the eggs and milk.
Combine the dry ingredients
and add, mixing well.
Refrigerate 30 minutes.
Fry in a small amount
of butter on a griddle.
Serve with butter and sugar.

Rommergrot ( microwave)

1 cup butter
1 cup all-purpose flour
3 cups half & half
1 cup whole milk
1/4 cup sugar
3/4 tps. salt
Melt butter in large
microwave-safe bowl.
Stir in flour with wire
whisk.
Cook until mixture bubbles;
cook 30 seconds longer.
Heat half & half and milk
together; slowly add to
flour mixture. Stir with
wire whisk while mixing.
Return to microwave
until mixture begins
to boil,
about 2 minutes. Remove
from microwave; stir in
sugar and salt.
Microwave 30 seconds
longer.
Add more hot milk if
necessary to reach
desired consistency.
Serve warm with melted
butter, cinnamon, and
sugar, if desired.
Sixteen servings.
