Fast and Easy Chili

Did you know that chili powder is just a mixture of several herbs and spices? You don't need any for this chili! Also, I haven't gone crazy, cocoa is an appropriate ingredient! Unsweetened chocolate is a common ingredient in Mexican and Southwestern cooking!

Ingredients

Directions

Saute chopped onion and garlic in small amount of oil until tender.

Add ground beef and brown thoroughly.

Add cumin, oregano, cocoa, coriander and cloves, mix with meat.

Add tomatoes and kidney beans, stir well, breaking up the tomatoes into small chunks.

Allow to simmer uncovered about one hour, stirring frequently, until thickened.

Salt to taste. I don't include salt in the list of ingredients because most canned tomatoes and beans have salt in them and frequently that is sufficient salt for this recipe.

You're done! If you find that the chili is thickening too quickly, you can add a little water from time to time and stir it in well. You do need to cook it for about one hour, though, so all flavors will blend.

Variations

You can make this a vegetarian chili by omitting the meat, or you can substitute other meats if you prefer, including ground turkey, ground chicken, chunks of chicken, lamb, pork or beef, etc.

Also, you can make this an all-meat chili, suitable for chili dogs, by not adding the beans. Simply add the tomatoes and their liquid and cook as directed, until thickened to taste.

This is a very thick, hearty chili, though it is not particularly "hot". You might wish to reduce the amount of cocoa, if you prefer a lighter chili. I would recommend adding the cocoa one teaspoonful at a time and then judge whether you want more or not!
