Vanilla Ice Cream

Ingredients

  • 250cc milk
  • 55g white sugar
  • 1/4 vanilla stick
  • 3 egg yolks
  • 50cc cream

  1. Slice the vanilla stick lengthwise. Then add the stick, milk, and half of the sugar to a pan. Cook till sugar melts.
  2. Place the egg yolks in a bowl. Stir, the add the sugar. Keep on stirring until the color turns white.
  3. To the bowl from the last step, add the milk gradually from step one. Stir, then return the solution to the pan.
  4. Use low heat to heat the pan. stir with a spatula until the solution turns to a syrup. (This creats the vanilla milk.) Then take the pan off the heat and let it cool.
  5. Place the cream in another bowl. Have this bowl placed in another bigger bowl with ice water to creat the water bath. Stir the cream for about 6 minutes or until bubbles start to form. Then, by using a filter, pour the vanilla milk into the cream.
  6. Then pour this mixture into a container and place in the freezer. For every 30 minute intervals, stir the mixture then replace the container into the freezer,
