Here is a list of beaches, as best I could list them. I found most of this information around the net.  

You will find that Northern beaches are the most swim friendly in Cancun, as the ocean is "buffered" by Isla Mujeres and the waves are not as bad.  Eastern beaches are much more violent with undercurrents, and the lifeguards will not let you swim past your thighs. Good for boating and water sports, not good for snorkeling.  

Northern Beaches
Location: Hotel Zone to Punta Cancun.
Good points: As far as I'm concerned these are the better places for water sports and swimmers. The waters are calm, the beaches are nice and they have some good hotels here too.
Special Stuff: The docks from which the Cruises, shuttles, and water taxis, etc. depart for Isla Mujeres are located here.

Playa Las Perlas (shuttle to Isla Mujeres and other tours here)
Here is a nice place for swimming and a good place for water sports. Naturally there are restaurants and bars on the beach just in case you get hungry. It is located about 2.5 km in the beginning of the Hotel Zone.

Playa Linda (The main dock with shuttles to Isla Mujeres and the Submarine and Dive tours.)
Located about 4 km inside the Hotel Zone.

Playa Langosta (Dock with shuttles to Isla Mujeres and other tours located here too)
Another good beach for water sports and swimming. Again lots of beach restaurants and bars. Located at km. 5 of the Hotel Zone.

Playa Tortugas (Another Dock offering shuttles to Isla Mujeres and other tours.)
Good swimming here, and perfect for water sports. A number of restaurants and refreshment bars located here too. Approx 6.5 km in the Hotel Zone.

Playa Caracol (Near Punta Cancun, ideal for children or beginner swimmers)
One of the nicer beaches because of its flat shallow sand bed. A great place for water sports and general fun (sail-boarding, water skiing, catamarans, wet bikes, pedal bikes and parasailing) Located 8.5 km within the Hotel Zone


East side Beaches
Points worth noting: These are not beaches for beginner swimmers. Large waves and strong undertow. Please follow any advisories.
Good Points: Great area for watersports

Gaviota Azul
Good water sport area - sail-boarding, water skiing and parasailing. 9km within the Hotel Zone, near Punta Cancun

Chac Mool
Good water sport area - sail-boarding, water skiing and parasailing. 10 km within the Hotel Zone, near Punta Cancun.

Playa Marlín
Good water sport area - sail-boarding, water skiing and parasailing. 13 km within the Hotel Zone, in between Punta Cancun and Punta Nizuc

Playa Ballenas
One of the more beautiful beaches in Cancun. 14km within the Hotel Zone, in between Punta Cancun and Punta Nizuc

San Miguelito
Small mayan ruins located here 16.5 km within the Hotel Zone

Playa Delfines
. Wonderful ocean view. 18km within the Hotel Zone, near Punta Nizuc

Punta Nizuc
Nice ocean view here too. The nicer hotels are located here, with good beaches too. 21km within the Hotel Zone
